Owner and Master Pizza Instructor

Massimiliano has more than 25 years of experience working as a pizzaiolo and pizzeria entrepreneur.
In 1991 he opened, together with his brother Gabriele, his first pizzeria-restaurant ‘Chiaro Scuro’ in Calenzano. Massimiliano learned everything about cooking and making excellent pizza himself, in order to know exactly how to control the quality of his business.
In 2003 Massimiliano and Gabriele were ready to start a pizzeria-restaurant like nobody had done before: a huge pizzeria-restaurant with 150 seats, designed by the famous architect Simone Micheli with an extraordinary eye for detail in futuristic style, just outside the centre of Florence, serving pizza and food at top quality level. It was the start of the pizzeria-restaurant ZERO ZERO in Florence, which soon became a famous pizzeria-restaurant for all Italians in and around Florence and which today is still a beloved place for them to go.

Massimiliano is a great kitchen chef, but his real love is making pizza. As a perfectionist, even after more than 25 years, he still continues to search for new ways to make excellent pizza.
Massimiliano started his first school in 2008 under his own name, based in the pizzeria-restaurant ZERO ZERO. But it didn’t stop with teaching inside his own pizzeria, it was also the start of many consultancy projects, especially pizzeria start-ups, all over the world: China, South Korea, Australia, the USA and so on.

In 2013 Massimiliano got engaged with Leonoor van Baarda, with who he got married in 2015. Leonoor helped Massimiliano to bring the pizza school to its next professional level. It was the beginning of the BASILICO PIZZA ACADEMY. Massimiliano continued to teach like he did before, and Leonoor organized everything around it. More students came in, from all over the world.

Due to the great success of the BASILICO PIZZA ACADEMY, the school grew bigger which forced Massimiliano, Gabriele and Leonoor to expand. By the end of 2016 it was time for the next step: the Pizza Academy got its own location, right at the side of the pizzeria-restaurant ZERO ZERO.
The new location also deserved to get a new name: BIVERÒ PIZZA ACADEMY.

The BIVERÒ PIZZA ACADEMY gives Massimiliano the possibility to first and better prepare students in the school, which is fully equipped with all necessary materials and even has different types of ovens, before they enter the real world of pizza making in the pizzeria of ZERO ZERO.

Owner and Managing Director

Leonoor is born in The Netherlands. She has a master degree in Policy, Communication & Organization (VU University Amsterdam) and worked as a Customer Relationship Manager in an IT company in The Netherlands.
Leonoor met Massimiliano in 2006, in the pizzeria-restaurant ZERO ZERO in Florence, after which they became friends. It took Massimiliano 7 years to conquer her heart. But when he finally did, it didn’t take long for Leonoor to leave everything behind and move to Italy.
They didn’t only become partners in life, but also partners in business. Leonoor is now co-owner of the pizzeria-restaurant ZERO ZERO and as the managing director in charge of the whole organization of the BIVERÒ PIZZA ACADEMY. She’s also your contact person when you would like to book a pizza course.

Gabriele Crocetti

Gabriele Crocetti

Manager and Wine Consultant

Gabriele is the brother and business partner of Massimiliano. Together they opened their first pizzeria-restaurant ‘Chiaro Scuro’ in Calenzano in 1991, and the pizzeria-restaurant ZERO ZERO in Florence in 2003.
Gabriele has always been in charge of the floor management, and he knows how to handle service management as no one else. He knows exactly what it takes to make clients happy.
Other than pizza, Gabriele became ‘king of the desserts’. Through the years, he managed to create a selection of desserts, which became as famous as the pizzas of ZERO ZERO.
Gabriele is also a great wine lover and sommelier. He is an amazing consultant when it comes to wine pairing, especially with pizza.
Gabriele helps Leonoor with the organization of the BIVERÒ PIZZA ACADEMY.
